Ingredients:
roll of goat cheese
3 slices multigrain bread, toasted
until bronze
1 beaten egg
olive oil for frying
mixed greens
dried cherries
lightly
toasted and candied pecans
balsamic vinegar
maple syrup
Slice a roll of chevre
into medallions 1/2 inch thick
Dip medallion in beaten egg, then roll it in toasted and crumbled bread crumbs
Put
on waxed paper and chill for at least 2 hours
Remove from refrigerator and fry in about 1/2 inch
of olive oil until browned (mere seconds)
Dress mixed greens in good balsamic vinegar with a drizzle
of maple syrup (grade B really is the best)
Sprinkle dried cherries and pecans artistically around
greens
Top with a glorious crown of fried chevre
